Chocolate Coconut Muffins

Hello everyone,

Today’s post is dedicated to these fluffy and delicious Chocolate Coconut Muffins which became my guilty pleasure since I got the recipe ^^ At first, I thought that I’m just gonna eat one muffin ~~or two~~, but well, I’m terrible at keeping my promise, especially when it comes to stop eating yummy food, that’s always the hardest and toughest torture :< So… I ended up having too many of them, for breakfast, after-breakfast (this should definitely counted as a meal because I had it every single day haha, too close to breakfast to be called brunch), dessert for lunch, for dinner. Will I ever give up eating? no. NO. Food is my life !! 😉

And these muffins look fancy, don’t they? Look at that crack on top and the lovely nicely browned toasted shredded coconut on top, just editing this post makes me wanna have them right now in the oven :< And if you love surprises, you will have them while enjoying your muffins, I did add some big chunks of chocolate in the batter to add that chewy and extra chocolatey flavor to each muffin xD of course, chocolate chips will work really well too so don’t worry about that !!
