Today, I introduce you Banana Pancakes – a simple but always perfect dessert everrrrr 😡 This is one of the most favorite desserts of many people in around the world =D You can show your creativity through the diversity of ingredients, such as fruits or even ice cream.
For my Banana Pancakes today, I decorated my dishes with honey, fresh banana and cornflakes (I always love the crunchiness <3). Actually, I’d like to enjoy pancakes with maple syrup, but anw, honey is okay xD You can also put a little amount of cold yogurt or ice cream on the pancakes to add more cool flavors to the pancakes ^^
Hihi, so here’s the recipe (I did modify it a little bit but don’t worry, the taste’s still remaining):
1. 2 large bananas
2. 1 1/2 cups flour
3. 1 1/2 cups buttermilk
4. 2 eggs, lightly beaten
5. 1 tsp honey
6. Olive oil cooking spray
7. Honey and reduced-fat passionfruit yoghurt or ice cream to serve

1. Mash 1 banana in a bowl. Place flour in another bowl. Make a well in the centre. Combine buttermilk, eggs, honey and mashed banana in a jug. Pour into well. Whisk until smooth. Stand for 10 minutes.
2. Spray a large, non-stick frying pan with oil. Heat over medium heat. Spoon 1/4 cup batter into pan. Cook for 2 to 3 minutes or until bubbles appear on the surface. Turn. Cook for 1 to 2 minutes or until golden and cooked through. Transfer to a plate. Cover to keep warm. Repeat with remaining batter to make 12 pancakes.
3. Thinly slice remaining banana. Place pancakes on plates. Top with sliced banana, honey and yoghurt. Serve.
