In one of my previous posts, I’ve already presented to all of you a recipe for Coconut Cookies (click HERE to read the full recipe). Today one more recipe will be added in your cookbook, different amounts, different ingredients but the result is still awesome. So please check it out ^^
300 grams plain flour
1 tsp baking powder
1 tsp salt
200 grams unsalted butter
150 grams granulated sugar (240 grams if you love sweets)
2 large eggs
1 tsp vanilla extract
150-200 grams shredded coconut (sweetened or unsweetened)
1. Preheat oven to 170 degrees C with rack in center of oven. Line two baking sheets with parchment paper.
2. In the bowl of your electric mixer (or with a hand mixer), beat the butter until smooth and creamy. Add the white sugar and beat until fluffy (about 2 mins). Beat in eggs, one at a time, beating well after each addition. Add the vanilla and beat until incorporated. Scrape down the sides of the bowl.
3. In a separate bowl, sift of whisk together the flour, baking powder, shredded coconut and salt. Add the dry ingredients to the egg mixture and beat until incorporated. If you find the dough very soft, cover and refrigerate until firm (about 30 mins)
4. For large cookies, use about a 2 tablespoon ice cream scoop or with two spoons, drop about 2 2 tablespoons of dough (35 grams) onto the prepared baking sheets. Bake about 10-12 mins, or until golden brown around the edges. Cool completely on wire rack.
Makes about 4 dozen- 3 inch round cookies.
