Banana Yogurt Muffins


I’m always impatient when watching the bananas in our kitchen become spotty ^^ That’s the right time to get your oven ready because we will rock out with some gorgeous and mouth-watering desserts. From popular and well-known Banana Cake, Banana Pancakes or Banana Muffins, to healthy Low-fat Banana Bread, or our lovely street food, Vietnamese Fried Banana Pancakes.

And how about Banana Yogurt Muffins? The cute small muffins that were combined by our favorite baking ingredients? If you have the same interest with baked goods from bananas, we will take some quick notes for the recipe, or simpler, go straight to your kitchen because it won’t take you more than 1 hour to finish all the preparation and baking ūüėČ

     Ingredients:

1/2 cup (113 grams) unsalted butter, room temperature

2/3 cup (150 grams) granulated white sugar

1/2 tsp vanilla

2 eggs

3 ripe bananas, mashed

1/2 cup (120 ml) plain yogurt

1 1/2 cup (210 grams) self-rising flour

     Method:

1. Preheat oven to 350 degrees.  Grease and flour muffin tins (or use muffin liners for easier cleanup).

2. In the bowl of your electric mixer or with a hand mixer, cream butter and sugar until light and fluffy.  Add the eggs, once at a time, beat well after each addition.

3. In a mixing bowl, combine yogurt, mashed bananas and vanilla until combined.  Add to the egg mixture, beating until fully incorporated. Slowly mix in the self-rising flour into the wet ingredients, making sure not to over mix.

4. Pour batter into prepared muffin tins and bake for about 25 minutes, or until a cake tester comes out clean.  Let muffins rest in pan for 7 minutes, then place on a wire rack to cool.
