When it comes to salad, I always love trying new flavors. I easily get tired of usual ones with the same dressing over and over, day after day, and along with it, the same ingredients. Personally, I really think that salad plays an important role in every meal, it isn’t just a side dish but well matching with the main dish, they will contribute the maximum appetite.
This Nutty Orange Chicken Salad is simple and easy to make, just like the other kinds of salad, but more than that, it brings a different flavor with the crunchiness of celery, the softness of chicken and the juiciness of oranges. I hope you guys will love this recipe and have fun making this mouth-watering salad ^^

Ingredients (serves: 4-6)
1 celery rib, diced
2 cups diced cooked chicken
2 large hard cooked eggs, peeled and chopped
1/2 cup chopped walnuts, toasted
1/4 cup sliced scallions, white and light green parts
1/2 cup mayonnaise
2 teaspoons freshly squeezed lemon juice
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 cups (about 3 ounces) Boston lettuce, for serving
1 (15-ounce) can mandarin oranges, drained, for garnish
Method:
In a large bowl, combine the celery, chicken, eggs, walnuts, scallions, mayonnaise, lemon juice, salt, and pepper.
Divide the greens equally among 4 to 6 plates. Serve the chicken over the greens and garnish with the orange segments.
