Thai Prawn Curry with Pineapple ^^


Having 3 days off is such a wonderful chance for me to realize all the recipes that I planned to do in the last week. Thai Prawn Curry with Pineapple is such a stunning dish for people who love Thai cuisine and for the ones who wanna discover the culture and the cuisine of this beautiful country. The curry paste truly brings the elements of the dish together, create an inspiring, fragnant flavor to the whole dish that you can’t forget once you taste it ^^

      Ingredients:

500 grams tiger prawns, peeled

1 stick lemongrass, trimmed and chopped

5 spring onions, sliced

3 cloves garlic, finely chopped

2 red chillies, seedless and chopped

1 tsp turmeric powder

1/4 cup coriander leaves

3 tbs oil

Salt, pepper

250 ml coconut milk + 150 ml fresh water

1 pineapple, cut into small pieces

     Method:

Put the chopped lemongrass, spring onions, garlic, red chillies, turmeric powder and coriander leaves in a food processor. Process until the mixture becomes smooth and well combined (the curry paste)

Heat a pan over medium high heat, pour the oil and put in the curry paste, stir well for about 1-2 mins. Pour the coconut and fresh water in the pan, stir well to combine. When this mixture is boiled, put in the prawns, season with salt and pepper.

Add the pineapple pieces, cook for about 10-12 mins. Serve with coriander and spring onions.
