Sweet Buns <3


After making the yummy Hokkaido Milk Bread (click HERE to see its recipe), I start loving bread. I really like mixing the dough, starting with the wet, sticky mixture of wet and dry ingredients and ending up with a smooth, elastic, non sticky dough ^^ Moreover, looking the dough double in size is extremely amazing, and again, when these small Sweet Buns are in the oven, they still grow and become sooooo wonderful and fluffy ❤

This time, I will show you how to make basic Sweet Buns. While the Hokkaido Milk Bread requires many ingredients, such as milk powder and whipping cream, you only need some simple ingredients to be successful with these lovely buns. And the result will definitely worth your efforts. They are not too sweet but a little crunchy in the outside and soft, tender and fluffy in the inside. You can even add a piece of cheese in the center of each bun so that it can melt and create a cheesy flavor for these delicious, tasty Sweet Buns xD

     Ingredients: (for 10 small sweet buns)

150 grams bread flour

150 grams cake flour

1 1/2 tsp instant yeast

1/2 tsp salt

125 ml fresh milk, room temperature

1 large egg

75 grams granulated white sugar

50 grams unsalted butter, room temperature

1 egg yolk for egg wash

Sesame seeds

     Method:

In a large mixing bowl, put in all the ingredients (except the egg yolk and sesame seeds). If you use a bread machine, set to Dough function until the ingredients are combined. If you do not have a bread machine, mix the ingredients and knead on medium speed with a stand mixer until the dough is smooth, non sticky, and elastic. Cover the bowl with a damp and allow the dough to double in size (for about 45-60 mins)

Punch out the dough and divide it into 5 portions. Shape them into balls and let it rest for about 10-15 mins.

Divide the 5 portions into 10 smaller portions, shape them into balls and allow the dough to double in size again.

In a small bowl, whisk the egg yolk with a little bit fresh milk until combined for the egg wash. Brush the dough with egg wash and sprinkle with sesame seeds. Preheat the oven at 180 degrees C and place rack in center of oven. When the surface of the Sweet Buns turns yellow (about 15 mins), replace the rack in lower level of oven until the surface turns lightly brown.
